I'm a big fan of fried chicken, so when my mom came home from work with the latest secret ingredient for that delicious and flavorful dish and offered me this recipe of her very own, I couldn't resist! It's not just because you can make your own from scratch. The fact that it was originally her doing is worth more than anything else in my opinion.
I had never actually tried much of these recipes before, so I was thrilled she had shared them so openly with us, especially since they were one of those ingredients that didn't make it onto any grocery store shelves, or even through some random website on Amazon. (I was able to snag three different packets of seasoning packet sauce, but honestly all else being equal? Just don't ask!) That said, I've decided to try these as well as take pictures for this tutorial so be sure and grab a copy of this article too. It's pretty detailed, but if you're unsure where to start reading that story of hers, then let's go over the steps, step-by-step, of how to make these cute little balls of fluff.
The first thing you're going to want to do is prepare a deep pan of water or an oven safe pot. There are many options with which you can prepare a pot, each with their pros and cons. Make sure you have a large pot or at least enough of a pot in your kitchen where you won't forget. Then, pour in the oil and place it into the pot, making sure to cover the rest of the bottom of the pot with water so the oil doesn't burn. You can also add spices, but keep in mind they'll need room so you can heat them up without burning yourself. Next, make sure to bring the temperature down low enough to avoid frying if the oil starts to get hot. If you notice a slight color change, you may need to lower the flame to around medium or low. Finally, once done cooking, turn off the burner, give it a few minutes to cool down, then drain and discard the grease. Pour out the fried items, add flour, and cook them until warmed through, usually about 25 to 30 seconds to two minutes per piece, depending on which type of frying you're using. Once warmed, transfer onto wire racks to cool completely. Then, use tongs or spatulas to move them from counter to table. Also, make sure you rinse and dry your hands thoroughly between each flip to avoid getting burns! And lastly, do not leave them unattended. They'll start flying away!
