HOW TO MAKE NIHARI

 Here is a simple recipe for making Nihari, a traditional Pakistani stew:

Ingredients:

  • 1 kg beef or mutton, cut into large pieces
  • 1 medium onion, chopped
  • 2 medium tomatoes, chopped
  • 2 tablespoons ginger-garlic paste
  • 2 teaspoons red chili powder
  • 2 teaspoons turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Oil for frying
  • 2 cups water
  • 2 tablespoons gram flour (besan)
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot or pressure cooker, heat some oil and fry the onion until golden brown.
  2. Add the tomatoes and cook until soft.
  3. Add the beef or mutton and cook until browned on all sides.
  4. Add the red chili powder, turmeric, cumin, coriander, garam masala and salt, and cook for a minute.
  5. Add the water and bring to a boil. If using a pressure cooker, cook for 3-4 whistles.
  6. If using a pot, let the stew simmer for 2-3 hours or until the meat is tender.
  7. Stir the paste into the stew and let it cook for 5 minutes.
  8. Serve the Nihari with fresh cilantro and naan or rice. Enjoy!
