Here is a simple recipe for making Nihari, a traditional Pakistani stew:
Ingredients:
- 1 kg beef or mutton, cut into large pieces
- 1 medium onion, chopped
- 2 medium tomatoes, chopped
- 2 tablespoons ginger-garlic paste
- 2 teaspoons red chili powder
- 2 teaspoons turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- Oil for frying
- 2 cups water
- 2 tablespoons gram flour (besan)
- Fresh cilantro for garnish
Instructions:
- In a large pot or pressure cooker, heat some oil and fry the onion until golden brown.
- Add the tomatoes and cook until soft.
- Add the beef or mutton and cook until browned on all sides.
- Add the red chili powder, turmeric, cumin, coriander, garam masala and salt, and cook for a minute.
- Add the water and bring to a boil. If using a pressure cooker, cook for 3-4 whistles.
- If using a pot, let the stew simmer for 2-3 hours or until the meat is tender.
- Stir the paste into the stew and let it cook for 5 minutes.
- Serve the Nihari with fresh cilantro and naan or rice. Enjoy!
